Mansoorah was never planned as a restaurant. It was a counter, a griddle and a hand-painted board on Colombo Road, run by people who thought they'd try it for a season.

01 — How it began

The first year,
there were
four dishes.

Chicken kottu, egg kottu, plain parotta and tea. That was the whole board in 2017. The kitchen was open to the road because there was no money to close it in, which turned out to be the best decision anyone made here — people stopped because they could smell it and see it happening.

Word moved the way it moves in Kinniya: someone's cousin came, then the three-wheeler drivers, then families on Friday nights. By the second year there were tables under the trees and a second griddle running beside the first, because one could no longer keep up.

Everything since has been added the same way — because people kept asking for it, not because a consultant drew it on a board.

02 — The long version

One fire at a time.

Nothing here arrived at once. Each addition came out of a season when the old setup stopped being enough.

2017

A counter on Colombo Road

One flat griddle, four dishes, a hand-painted board and a kettle. Open from noon, closed when the roti ran out.

2018

The second griddle

Friday nights had become unmanageable on one plate. A second went in beside it, and the sound of the place doubled.

2019

Charcoal goes in

A proper coal pit, built for whole chickens and seer fish. It ran on trial for a month; it has not been cold since.

2021

Tables under the trees

Outdoor seating, string lights and a roof over the yard. People had been eating standing up for four years; it was time.

2023

Bucket biryani

Built for families and weddings — sealed, carried whole, opened at the table. Chicken, mutton, beef and vegetable, ordered an hour ahead.

2024

The seafood board

A standing arrangement with the Trincomalee boats. Crab, prawn and cuttlefish arrive in the morning and are gone by close.

Forty dishes, three fires

4.2 stars across 156 Google reviews and a kitchen that still runs twelve hours a day, seven days a week. The board is longer. The rules haven't changed.

03 — The people

Most of the kitchen
has been here
longer than the roof.

Nine cooks work the floor across a single long shift. Several started as teenagers washing plates in the first year and now run the griddle on a Saturday, which is the hardest station in the building.

There is no head-chef mystique here and no tasting menu. There is one person who decides how the curry powder is roasted, and everybody else learns it by standing next to them for a year.

Nobody arrives qualified. Everybody leaves able to run a griddle through a Friday rush.

Twelve hours, every day

Eleven to eleven, seven days. The pots go on before the doors open and the coals are lit by ten.

04 — What we won't change

Four rules,
eight years old.

They were set in the first month and have survived every expansion since. They are also the reason a few things here are less convenient than they could be.

Rule one

Nothing waits

No warmers, no holding trays, no reheating. If it takes fifteen minutes on a Saturday, it takes fifteen minutes.

Rule two

Bought that morning

Seafood comes off the Trincomalee boats the same day it's cooked. When it's finished, it's finished — we don't freeze it forward.

Rule three

Cash, still

No card machine. It keeps prices where they are and the queue moving. There is an ATM on the main road if you need one.

Rule four

Built for tables of eight

Portions, buckets and outdoor seating are all sized for families. Coming as a pair is fine — just don't order three mains.

And always

Halal, no exceptions

Every supplier is vetted and every cut is sourced locally. It has never been a question in this kitchen.

05 — The room

Loud, warm,
and full by eight.

There is an inside room for when the rain comes, and there is the yard, which is where everybody actually wants to sit. String lights, long tables, and enough space between them that a family of ten can pull two together without asking.

It is not a quiet restaurant. The griddle is ten feet from the nearest table by design, and on a Friday you will hear every order being made. That is the whole point.
